There are about nine distinct sections of meat on a cow, each producing different cuts of beef. The most prized cuts are those labeled as prime, like rib eye, porterhouse, T-bone, sirloin, and fillet. Learn more about different cuts of beef by watching this video.

The rib eye is a favorite cut from the small end of the rib roast and is grilled best medium or medium rare. The porterhouse is actually made from two cuts of meat: the short loin and the fillet. Next to the porterhouse is the T-bone; this is a classic bone-in steak with a slightly thinner cut than the porterhouse. Tenderloins are the leanest of all the cuts.
